Prepare the Ingredients
Trim zucchini ends, quarter, and cut into 1/2" dice. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.
Trim yellow squash ends, quarter, and cut into 1/2" dice.Coarsely crush pecans.Pat trout dry and season flesh side with 1/4 tsp. salt and a pinch of pepper. -
Assemble the Vegetables
In a mixing bowl, combine 2 tsp. olive oil, pesto, zucchini, and yellow squash.
Transfer vegetables to one half of prepared baking sheet. Spread into an even layer on their side. -
Add the Trout
In another mixing bowl, combine softened cream cheese, smoked paprika, and garlic pepper. Set aside.
Place trout on empty side of sheet and evenly top with cream cheese mixture, then crushed pecans, pressing gently to adhere. -
Roast Vegetables and Trout and Finish Dish
Roast in hot oven until vegetables are tender and trout reaches a minimum internal temperature of 145 degrees, 12-15 minutes.
Carefully remove from oven. Stir softened butter into vegetables until melted and combined. Sheet will be hot! Use a utensil.To serve, top trout with hot honey (to taste). Bon appétit!
