Cooking Guidelines

If using ground beef, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 25-30 minutes.

Prepare the Carrots
Place carrots in a microwave-safe bowl.
Microwave uncovered until carrots are slightly tender, 4-5 minutes.Carefully remove from microwave.Place microwaved carrots, 4 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper in one provided tray. Stir oil and seasonings into carrots. Spread into an even layer. Wipe bowl clean and reserve. -
Form the Meatballs
In a mixing bowl, combine ground pork, garlic salt, half the chimichurri seasoning (reserve remaining for rice), panko, and half the creme fraiche (reserve remaining for crema).
Form mixture into 16 equally-sized meatballs and place in second provided tray. -
Bake Meal, Make Crema, and Heat Rice
Bake both trays uncovered in hot oven until carrots are tender and meatballs reach a minimum internal temperature of 160 degrees, 25-30 minutes.
While meal bakes, in another mixing bowl, combine remaining creme fraiche, tzatziki, and a pinch of salt and pepper. Set aside.Carefully massage rice in bag to break up any clumps and remove from packaging.Place rice, chicken base, remaining chimichurri seasoning, 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper in reserved microwave-safe bowl. Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork.Carefully remove both trays from oven. Stir softened butter into carrots until melted. Tray will be hot! Use a utensil.To serve, top meatballs with crema. Bon appétit!
