If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

1 Prepare the Ingredients
Halve lemon lengthwise. Cut one half into wedges and juice the other half.
Trim zucchini ends, quarter, and cut into 1/2" dice. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.Stem and tear dill. -
2 Cook the Chicken and Zucchini
Pat chicken dry and season all over with za'atar seasoning. Don't worry about trimming. Excess fat will render while cooking and add flavor.
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.Add chicken, zucchini, and 1/2 tsp. salt to hot pan. Stir occasionally until chicken is lightly browned and reaches a minimum internal temperature of 165 degrees, 5-7 minutes.Remove from burner.While chicken and zucchini cook, continue recipe. -
3 Heat the Rice
Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Combine rice, piri piri seasoning (to taste), minced garlic and lemon basil, and a pinch of salt in a microwave-safe bowl. Kids not a fan of extra heat? Feel free to skip the piri piri seasoning.
Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork. -
4 Make Lemon Tzatziki and Finish Dish
In a mixing bowl, combine 2 tsp. lemon juice, tzatziki, and dill. Set aside. Get the kids involved! With supervision, have them help prepare the tzatziki.
Plate dish as pictured on front of card, topping rice with chicken and zucchini and garnishing with lemon tzatziki. Squeeze lemon wedges over dish to taste. Bon appétit!
