-
If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.
-
1 Cook the Chicken
Pat chicken thighs dry and season all over with a pinch of salt and pepper. Don't worry about trimming. Excess fat will render while cooking and add flavor.
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add chicken to hot pan. Stir occasionally until chicken browns and reaches a minimum internal temperature of 165 degrees, 5-7 minutes.Remove from burner. Transfer chicken to a plate and set aside. Reserve pan; no need to wipe clean. -
2 Start the Sauce
Return pan used to cook chicken to medium heat and add 2 tsp. olive oil.
Add tomatoes to hot pan and stir occasionally until tomatoes soften, 3-5 minutes. If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions. -
3 Finish Sauce and Add Orzo
Stir spinach (adding in batches, if necessary) into hot pan until wilted, 1-2 minutes.
Add orzo and stir occasionally until heated through, 2-3 minutes.Stir in cream base and chicken base and bring to a simmer. -
4 Add Chicken and Finish Dish
Once simmering, add chicken and any accumulated juices to hot pan and stir until heated through, 2-4 minutes.
If too thick, add water, 1 Tbsp. at a time, until desired consistency is reached.Remove from burner. Stir in garlic salt.Plate dish as pictured on front of card, garnishing with cheese. Bon appétit!
