Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Start the Potatoes and Garlic
Cut red potatoes into 1" pieces.
Place garlic cloves and 1 tsp. olive oil on a piece of foil and form a foil pouch around garlic.
Combine red potatoes, sweet potatoes, 2 tsp. olive oil, piri piri seasoning (use less if spice-averse), garlic and parsley seasoning, and a pinch of salt on prepared baking sheet. Massage oil and seasonings into potatoes. Spread into an even layer.
Place garlic pouch in corner of baking sheet.
Roast in hot oven until potatoes are slightly tender, 15-18 minutes.
Carefully remove from oven. Remove garlic pouch from sheet.

2 Add the Salmon
Push potatoes to one side. Sheet will be hot! Use a utensil.
Pat salmon dry. Season flesh side with 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper.
Place salmon, skin-side down, on now-empty side of sheet.

3 Finish the Potatoes and Salmon
Roast in hot oven until potatoes are fork-tender and salmon reaches a minimum internal temperature of 145 degrees, 12-14 minutes.
Carefully remove from oven. Stir softened butter into potatoes. Sheet will be hot! Use a utensil.
While dish roasts, continue recipe.

4 Make Sauce and Finish Dish
Stem and coarsely chop cilantro.
In a mixing bowl, mash roasted garlic into a paste-like consistency with a fork.
Add cilantro, lemon juice, 1 Tbsp. olive oil, and a pinch of salt and pepper. Stir to combine.
To serve, top salmon with sauce. Bon appétit!
