If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until salmon reaches minimum internal temperature, 4-6 minutes per side.

Start the Vegetables
Quarter potatoes.
Place potatoes, potato spice seasoning, 2 tsp. olive oil, and a pinch of salt and pepper on prepared baking sheet. Massage oil and seasonings into potatoes. Spread into an even layer.Roast in hot oven, 15 minutes.While potatoes roast, continue recipe. -
Add the Corn and Poblanos
Stem poblano pepper, seed, and cut into 1/2" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping.
After 15 minutes, carefully remove sheet from oven. Add corn, poblanos (use less if spice-averse), and a pinch of salt to baking sheet. Stir to combine and push vegetables to one side. Sheet will be hot! Use a utensil. -
Add the Trout
Pat trout dry. Season flesh side with blackening seasoning and a pinch of salt.
Place trout on empty side of sheet. -
Finish Vegetables and Trout and Finish Dish
Roast in hot oven until vegetables are tender and trout reaches a minimum internal temperature of 145 degrees, 7-10 minutes.
Carefully remove from oven.Stir softened butter into vegetables until melted and combined.To serve, top trout with remoulade. Bon appétit!
