Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Prepare the Ingredients
Cut plantains into 2" pieces on an angle.
Drain and rinse beans in a colander/strainer.Zest and halve lime. Cut one half into wedges and juice the other half.Pat chicken dry. Season both sides with jerk seasoning (use less if spice-averse) and 1/4 tsp. salt. Kids not a fan of extra heat? Feel free to skip the seasoning. -
2 Cook the Plantains
Line a plate with a paper towel.
Place a large non-stick pan over medium heat and add 1 Tbsp. olive oil.Add plantains to hot pan. Cook until golden-brown, 2-3 minutes per side.Transfer plantains to towel-lined plate and season all over with a pinch of salt.Wipe pan clean and keep over medium heat. Pan will be hot! Use caution. -
3 Cook the Chicken
Add 2 tsp. olive oil and chicken to hot pan. Cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 3-5 minutes per side.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Remove from burner.While chicken cooks, continue recipe. -
4 Heat the Rice
Carefully massage rice in bag to break up any clumps and remove from packaging.
Place rice, peas, beans, and garlic salt in a microwave-safe bowl. Stir to combine.Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Stir in softened butter and 1/4 tsp. salt until combined. Fluff rice with a fork.While rice heats, continue recipe. -
5 Make Crema and Finish Dish
In a mixing bowl, combine creme fraiche, 2 tsp. lime juice, 1/4 tsp. lime zest, a pinch of salt, and 1 tsp. water. Set aside.
Plate dish as pictured on front of card, topping chicken with crema. Squeeze lime wedges over dish to taste. Bon appétit!
