Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground turkey, cook until patties reach minimum internal temperature, 6-8 minutes per side.

1 Roast the Fries
Cut potatoes into 1/2"-thick fries and pat dry.
Place fries on prepared baking sheet and toss with 1 Tbsp. olive oil, half the onion salt (reserve remaining for patties), and 1/4 tsp. pepper. Spread into a single layer.Roast in hot oven until lightly browned, 25-30 minutes, tossing once halfway through.Carefully remove from oven and toss with half the buttermilk-dill seasoning (reserve remaining for crema).While fries roast, continue recipe. -
2 Cook the Patties
Form ground beef into four equally-sized patties, about 5" in diameter. Season both sides with remaining onion salt and 1/4 tsp. pepper.
Place a large non-stick pan over medium-high heat.Add patties to hot, dry pan. Working in batches if needed, cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.Remove from burner.While patties cook, continue recipe. -
3 Crisp Bacon and Toast Buns
Line a plate with a paper towel. Place another large non-stick pan over medium-high heat.
Add bacon to hot, dry pan and stir often until crispy, 2-3 minutes.Transfer bacon to towel-lined plate. Keep pan over medium heat; no need to wipe clean.Add buns, cut-side down, to hot pan and toast until lightly browned, 1-2 minutes.Remove from burner. -
4 Make Crema, Prepare Tomatoes, and Finish Dish
In a mixing bowl, combine sour cream, remaining buttermilk-dill seasoning, and 1 Tbsp. water. Set aside.
Core tomatoes and cut into 1/4" rounds.Plate dish as pictured on front of card, topping bottom bun with aioli, bacon, patty, tomatoes, arugula, and top bun. Drizzle crema over fries. Bon appétit!
