Cooking Guidelines

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

Prepare the Ingredients
Tear tortillas into quarters.
Drain and rinse beans. -
Start the Skillet
Place a large non-stick pan over medium-high heat.
Add ground beef, diced peppers, and a pinch of salt to hot, dry pan.Break up beef until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Drain any excess grease from pan. Pan will be hot! Use a utensil. -
Add the Sauce
Add flour to hot pan and stir until no dry flour remains.
Stir in 2 Tbsp. water, enchilada sauce, corn, taco seasoning, 1/2 tsp. salt, and a pinch of pepper until combined. Bring to a simmer.Once simmering, stir often until slightly thickened, 1-2 minutes.If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached.Reduce heat to low. -
Finish Skillet and Finish Dish
Stir tortillas and beans into hot pan.
Spread into an even layer and evenly top with cheese.Cover and cook until cheese is melted, 2-3 minutes.Remove from burner.Plate dish as pictured on front of card, topping skillet with sour cream. Bon appétit!
