Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

    Start the Sweet Potatoes

    Peel and cut sweet potatoes into 1/2" dice.

    Place sweet potatoes on prepared baking sheet and top with 4 tsp. olive oil, half the seasoned salt (reserve remaining for chicken), za'atar seasoning, 1/4 tsp. salt, and a pinch of pepper. Massage oil and seasonings into sweet potatoes. Spread into a single layer.

    Roast in hot oven, 10 minutes.

    While sweet potatoes roast, continue recipe.

    Finish Sweet Potatoes and Roast Chicken

    Pat chicken dry and season both sides with remaining seasoned salt.

    After 10 minutes, carefully remove sheet from oven and push sweet potatoes to one side of sheet. Sheet will be hot! Use a utensil.

    Place chicken on now-empty side of sheet.

    Roast in hot oven until sweet potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 18-20 minutes.

    Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner. Carefully remove from oven.

    While sweet potatoes and chicken roast, continue recipe.

    Make the Rice

    Carefully massage rice in bag to break up any clumps and remove from packaging.

    In a microwave-safe bowl, combine rice, piri piri seasoning (to taste), and 2 tsp. olive oil.

    Microwave uncovered until heated through, 2-3 minutes.

    Carefully remove from microwave. Rest, 2 minutes.

    Fluff rice with a fork and stir in cranberries and almonds until combined.

    While rice heats, continue recipe.

    Make Chermoula and Finish Dish

    In a mixing bowl, combine pesto and chimichurri (to taste). Set aside.

    To serve, top chicken with chermoula (to taste). Bon appétit!
