Prepare the Ingredients
Preheat oven to 400 degrees.
Combine rice, 2 Tbsp. water, corn, and seasoning rub in provided tray. -
Add the Pork
Break ground pork into small clumps and place on rice evenly.
Top evenly with 1/4 tsp. salt, a pinch of pepper, enchilada sauce, cheese. -
Bake the Meal
Bake uncovered in hot oven until pork is browned and reaches a minimum internal temperature of 160 degrees, 25-30 minutes.
Carefully, remove tray from oven. Garnish with sour cream and crispy tortilla strips. Bon appétit!
