If using ground beef, break up in a medium non-stick pan over medium heat with 1 tsp. olive oil until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, break up in a medium non-stick pan over medium heat with 1 tsp. olive oil until turkey reaches minimum internal temperature, 6-8 minutes.

1 Bake the Ground Pork Mixture
Evenly divide ground pork, fiesta seasoning, garlic salt, chicken base, 2 tsp. olive oil, and carrots between both provided trays. Break ground pork into bite-sized pieces and spread into an even layer.
Bake both trays uncovered in hot oven until pork reaches a minimum internal temperature of 160 degrees, 16-18 minutes. Carefully remove from oven and stir to break up pork. Trays will be hot! Use a utensil.While pork mixture bakes, continue recipe. -
2 Prepare Ingredients and Heat Rice
Drain beans in a colander/strainer.
Halve lime and juice.Carefully massage rice in bag to break up any clumps and remove from packaging.Place rice, beans, and 1/4 tsp. salt in a microwave-safe bowl. Stir to combine. Microwave uncovered until heated through, 2-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in half the chimichurri (to taste; reserve remaining for sauce), half the lime juice (reserve remaining for crema), and a pinch of salt until combined.While rice microwaves, continue recipe. -
3 Make Chimichurri Crema and Finish Meal
In a mixing bowl, combine remaining chimichurri (to taste), sour cream, remaining lime juice, and a pinch of salt. Set aside.
To serve, top rice and beans with pork mixture. Garnish with chimichurri crema (to taste). Bon appétit!
