Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. If using antibiotic free chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side. Add protein to meal as desired.

Prepare the Ingredients
Core tomato and cut into 1/2" dice.
Halve and peel onion. Cut halves into 1/4" dice.In a mixing bowl, combine diced tomatoes, 1 tsp. pesto (reserve remaining for sauce), a pinch of pepper, and 1 tsp. olive oil. Set aside. -
Make the Sauce
Place a medium pot over medium-high heat and add 2 tsp. olive oil.
Add onions and 1/4 tsp. salt to hot pot. Stir occasionally until onions are browned and tender, 3-4 minutes.Add remaining pesto, crushed tomatoes, 1/2 cup water, mirepoix base, and a pinch of salt and pepper. Cover and bring to a simmer.Once simmering, reduce heat to medium-low and stir occasionally until slightly thickened, 8-10 minutes.Remove from burner.While sauce cooks, continue recipe. -
Cook the Gnocchi
Line a plate with a paper towel.
Place a medium non-stick pan over medium heat and add 1 Tbsp. olive oil.Add gnocchi to hot pan. Stir occasionally until tender and golden-brown, 5-7 minutes.Remove from burner and transfer gnocchi to towel-lined plate. -
Broil Garlic Bread and Finish Dish
Separate ciabatta halves.
Spread cut-sides of ciabatta with softened butter. Place garlic bread directly on oven rack, cut-side up.Broil under hot broiler until bread is lightly browned, 2-3 minutes.Don't text and broil! Keep an eye on oven as bread may burn easily under broiler.Carefully remove from broiler.Plate dish as pictured on front of card, topping sauce with gnocchi, tomato-pesto mixture, cheese, and balsamic glaze. Halve garlic bread diagonally, if desired. Bon appétit!
