Easy to prepare, but oh so elegant, this tantalizing recipe features asparagus spears wrapped with prosciutto and served next to a juicy flat iron steak, balsamic glazed mushrooms, and a roasted red pepper puree. Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prep the Vegetables
Preheat the oven to 375 degrees for the roasting of the asparagus. Slice the mushrooms. Rough chop the parsley. Remove the red pepper puree from the refrigerator and let come to room temperature for plating.

Roll the Asparagus
Grasp two pieces of asparagus at the root end with one hand, and roll two pieces of prosciutto around the center of the two sprigs of asparagus, leaving the tips of the asparagus exposed.

Roast the Asparagus
Place the prosciutto wrapped asparagus on a baking sheet and drizzle with 1 tsp of oil and season with a pinch of pepper. Roast in the oven for 5 minutes, then flip and roast for another 5 minutes or until the prosciutto is golden brown and crispy.

Sautee the Mushrooms
Heat a sauté pan over medium heat. Add 1 tbsp. of oil to the pan, place mushrooms in the pan and cook for 2-3 minutes or until mushrooms are golden brown. When mushrooms are browned, deglaze with the balsamic vinegar and reduce until the mushrooms are glazed with the balsamic vinegar.

Cook the Steak
Heat a sauté pan over medium to high heat. Add 1 tsp of oil to the pan. Salt and pepper the flat iron steaks and add to the pan. Cook on each side for 5 to 6 minutes or until steak has formed a crispy caramelized crust and the steak is firm to the touch. This cooking time will produce a medium temperature steak.

Plate the Dish
Place the flat iron steak in the middle of the plate. Top the steak with balsamic glazed mushrooms. Lay prosciutto wrapped asparagus against the steak on an angle. Sauce the plate with the red pepper puree, a long thin composed straight line works best. Garnish the plate with chopped parsley.
