1 Start the Vegetables
Cut potatoes into 1" dice.
Place potatoes on prepared baking sheet and toss with 1 Tbsp. olive oil, potato spice seasoning, and a pinch of pepper. Spread into an even layer.Roast in hot oven, 12 minutes. While potatoes roast, continue recipe. -
2 Make Bacon Topping and Prepare Ingredients
In a mixing bowl, combine brown sugar and bacon. Set aside.
Trim and thinly slice green onions, keeping white and green portions separate.Pat chicken dry and season both sides with 1/4 tsp. salt. -
3 Add the Chicken and Corn
After 12 minutes, carefully remove baking sheet from oven. Stir corn and white portions of green onions into potatoes and push to one side of baking sheet. Potatoes will be hot! Use a utensil.
Place chicken on now-empty side of baking sheet. Top evenly with BBQ sauce, then bacon topping, pressing gently to adhere. -
4 Finish Vegetables and Chicken and Finish Dish
Roast in hot oven until potatoes are golden-brown and tender and chicken reaches a minimum internal temperature of 165 degrees, 15-18 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven. -
5 Finish the Dish
