1 Start the Potatoes
Prick potatoes all over with a fork. Place potatoes in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until slightly tender, 4-6 minutes.Carefully remove from microwave. Transfer potatoes to one provided tray and top with 2 tsp. olive oil and 1/4 tsp. salt. Massage oil and salt into potatoes and spread into even layer.Bake uncovered in hot oven until fork-tender, 25-30 minutes.While potatoes bake, continue recipe. -
2 Bake the Chicken
In a mixing bowl, combine BBQ sauce and maple syrup. Set aside.
Coarsely crush pecans in shipping bag. Get the kids involved! With supervision, have them help crush the pecans.Pat chicken dry and season both sides with 1/4 tsp. salt and a pinch of pepper.Place chicken in second provided tray. Top evenly with half the maple-BBQ (reserve remaining for garnish), then crushed pecans.Bake uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner. -
3 Finish Potatoes and Finish Meal
After 25-30 minutes, carefully remove potatoes from oven.
Using the flat side of an object (like a drinking glass), press down gently to smash each potato until 1/2" thick. Potatoes will be hot! Use caution. Return to tray, layering evenly with bacon, garlic pepper, and cheese.Bake again uncovered in hot oven until cheese melts and bacon crips, 7-10 minutes.While meal bakes, trim and thinly slice green onions.Carefully remove both trays from oven.To serve, garnish potatoes with green onions and sour cream and top chicken with remaining maple-BBQ.
