1 Prepare the Meatloaf
In a mixing bowl, combine ground turkey, panko, garlic salt, and 1/4 tsp. pepper. Evenly press mixture into one prepared loaf pan. Top evenly with BBQ sauce.
Don't have two loaf pans? Form turkey mixture into a large oval, roughly 6" long and 4" wide and place on a foil-lined baking sheet. Top with BBQ sauce and bake as directed. -
2 Prepare the Cornbread
Trim and thinly slice green onions.
In another mixing bowl, thoroughly combine corn muffin mix, 1 cup water, half the green onions (reserve remaining for garnish), and half the cheese (reserve remaining for topping).Place batter into second prepared loaf pan and spread into an even layer. Top with remaining cheese.Don't have two loaf pans? Divide batter evenly into four cups of a prepared muffin tin, top with remaining cheese, and bake in hot oven until lightly browned and starting to crack, 14-17 minutes. -
3 Bake the Meatloaf and Cornbread
Bake meatloaf and cornbread on middle rack in hot oven until bread is lightly browned and starts to crack and meatloaf reaches a minimum internal temperature of 165 degrees, 20-25 minutes.
Carefully remove from oven. Rest, 5 minutes. While meatloaf and cornbread bake, continue recipe. -
4 Cook the Green Beans
Trim green beans, if necessary.
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add green beans to hot pan and cook, 1 minute.Add 1/4 cup water, cover, and cook until tender, 6-8 minutes. If green beans need more time, add 2 Tbsp. water, cover, and stir occasionally, 1-3 minutes.Add butter and potato spice seasoning. Stir until melted and combined, 30-60 seconds.Remove from burner. -
