Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

Cook the Rice
Bring a medium pot with rice, 2 1/2 cups water, and garlic salt to a boil.
Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.Remove from burner. Stir in lime juice (prepared in next step), cilantro (prepared in next step), and butter until combined. Cover and set aside.While rice cooks, continue recipe. -
Prepare the Ingredients
Halve lime and juice.
Tear cilantro leaves.Drain and rinse black beans.Stem poblano peppers, seed, and cut into 1/4" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping. -
Cook the Turkey Mixture
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add ground turkey and poblanos (use less if spice-averse) to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.Stir in drained black beans, taco seasoning, and half the salsa (to taste; reserve remaining for garnish) until combined.Remove from burner.While turkey mixture cooks, continue recipe. -
Heat Tortillas and Finish Dish
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded.
Microwave until warm, 30-60 seconds.Carefully remove from microwave.Plate dish as pictured on front of card, filling tortillas with turkey mixture, remaining salsa (to taste), and sour cream. Bon appétit!
