Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

Roast the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries on prepared baking sheet and toss with 2 tsp. olive oil, 1/2 tsp. salt, everything bagel blend, and a pinch of pepper. Spread into a single layer.Roast in hot oven until lightly browned, 25-30 minutes, tossing once halfway through.While fries roast, continue recipe. -
Make Slaw and Prepare Tofu
In a mixing bowl, combine cabbage and a pinch of salt. Gently massage salt into cabbage until slightly softened. Set aside.
Drain tofu. Line a plate with paper towels. Cut tofu into 1/2" planks widthwise. You should have 8 planks total.Place tofu on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture.Evenly coat tofu with cornstarch, potato seasoning, and a pinch of salt on both sides. -
Fry the Tofu
Line another plate with a paper towel.
Place a large non-stick pan over medium-high heat and add 3 Tbsp. olive oil. Test oil temperature by adding a pinch of cornstarch to it. It should sizzle gently. If it browns immediately, turn heat down and let oil cool. If it doesn't brown, increase heat. Add tofu to hot pan. Cook undisturbed until golden-brown, 6-8 minutes per side. Don't rush cooking the tofu; it will need the complete cooking time for the correct crispness.Remove from burner. Transfer tofu to towel-lined plate. -
Assemble the Cheesy Tofu Planks
Place a medium non-stick pan over medium heat. Place two tofu planks side by side in hot, dry pan. Top planks with half the cheese, then two more planks. Tofu layers should be perpendicular to one another like Jenga pieces!
Repeat with remaining tofu and cheese. Cook undisturbed until cheese begins to melt, 1-2 minutes. Remove from burner. -
Toast Buns and Finish Dish
Place buns, cut-side up, directly on rack in hot oven until warm, 3-4 minutes.
Carefully remove from oven.Plate dish as pictured on front of card, topping bottom bun with cheesy tofu planks, dressing, slaw, and top bun. Bon appétit!
