Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Prepare the Ingredients

    Remove stem, seeds, and ribs, and cut bell pepper into 1/4" slices.

    In a mixing bowl, combine ground pork, panko, cheese, and half the taco seasoning (reserve remaining for vegetables). Form into 8 equally-sized meatballs.

    Add the Vegetables and Meatballs

    On one side of prepared baking sheet, combine bell peppers, corn, 2 tsp. olive oil, and remaining taco seasoning. Massage oil and seasoning into vegetables. Spread into an even layer on their side.

    Place meatballs on empty side of baking sheet.

    Roast the Meatballs and Vegetables

    Roast in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-18 minutes.

    While meatballs and vegetables roast, continue recipe.

    Heat Rice and Finish Dish

    Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Place rice in a microwave-safe bowl. Microwave uncovered until heated through, 2-3 minutes.

    Carefully remove from microwave. Rest, 2 minutes.

    After 2 minutes, add 1/4 tsp. salt and fluff rice with a fork.

    To serve, top rice with vegetables and meatballs. Garnish with salsa (to taste), sour cream, and tortilla strips. Bon appétit!
