Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground turkey, roast until meatballs reach minimum internal temperature, 17-20 minutes.

If using Impossible burger, roast until meatballs reach minimum internal temperature, 23-25 minutes.

1 Start the Cauliflower Mash
Bring a medium pot with cauliflower covered by water to a boil.
Once boiling, cook until fork-tender, 12-15 minutes.Remove from burner. Drain all water from cauliflower in a colander and return to pot. Thoroughly drain cauliflower; excess water will make cauliflower mash runny. Mash until smooth.While cauliflower cooks, continue recipe. -
2 Prepare the Ingredients
Mince chives.
In a mixing bowl, combine cornstarch and 2 tsp. water.In another mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground beef, half the creme fraiche (reserve remaining for cauliflower), 1/2 tsp. salt, and a pinch of pepper to bowl with panko and combine. Form mixture into eight equally-sized meatballs. -
3 Roast the Meatballs
Place meatballs on prepared baking sheet.
Roast in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.While meatballs roast, continue recipe. -
4 Finish the Cauliflower Mash
Add remaining creme fraiche, garlic and parsley seasoning, softened butter, and 1/2 tsp. salt to pot with cauliflower. Stir vigorously to combine. Cover and set aside.

5 Make Sauce and Finish Dish
Place a medium non-stick pan over medium heat. Stir cornstarch mixture
Add 1/4 cup water, mirepoix base, cornstarch mixture, and chives to hot pan. Stir to combine and bring to a simmer.Once simmering, stir occasionally until sauce thickens, 30-60 seconds.Remove from burner.Plate dish as pictured on front of card, topping mashed cauliflower with meatballs and garnishing with sauce.
