If using antibiotic free chicken breasts or chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

Start the Carrots
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.
Place carrots, 2 tsp. olive oil, half the chimichurri seasoning (reserve remaining for salmon), and a pinch of salt on prepared baking sheet. Massage oil and seasonings into carrots and spread into an even layer.Roast in hot oven, 10 minutes.While carrots roast, continue recipe. -
Add the Salmon
Finely crush pita chips in shipping bag.
Pat salmon dry and season flesh side with remaining chimichurri seasoning and 1/4 tsp. salt.After 10 minutes, carefully remove sheet from oven and push carrots to one side. Sheet will be hot! Use a utensil.Place salmon, skin-side down, on now-empty side of sheet. Evenly top flesh side with mayonnaise, then crushed pita chips and panko, pressing gently to adhere. Spray salmon with cooking spray. Sheet will be hot! Use caution. -
Finish the Carrots and Salmon
Roast in hot oven until carrots are tender and salmon reaches a minimum internal temperature of 145 degrees, 9-11 minutes.
Carefully remove from oven.While carrots and salmon roast, continue recipe. -
Heat Rice and Finish Dish
Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Stir in softened butter and buttermilk-dill seasoning until combined. Rest, 2 minutes.Fluff rice with a fork.To serve, top salmon with tzatziki. Bon appétit!
