If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

Start the Fries
Cut sweet potatoes into 1/4"-thick fries.
Place fries, 1 Tbsp. olive oil, piri piri seasoning (to taste), and 1/4 tsp. salt on prepared baking sheet. Massage oil and seasonings into fries. Spread into a single layer.Roast in hot oven until slightly tender, 10-15 minutes.While fries roast, continue recipe. -
Add the Chicken
Pat chicken dry and season both sides with fiesta seasoning (reserve a pinch for topping) and a pinch of salt.
After 10-15 minutes, carefully remove baking sheet from oven. Flip fries and push to one side of sheet. Fries will be hot! Use a utensil.Place chicken on now-empty side of baking sheet and evenly top with cheese. -
Finish the Fries and Chicken
Roast in hot oven until fries are golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 13-16 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.While fries and chicken roast, continue recipe. -
Make Topping and Finish Dish
Core tomato and cut into 1/4" dice.
Tear cilantro leaves.In a mixing bowl, combine tomatoes, cilantro, remaining fiesta seasoning, and a pinch of salt and pepper. Set aside.To serve, top chicken with guacamole (to taste), tomato topping, and tortilla strips. Bon appétit!
