If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

Prepare the Ingredients
Break broccoli into bite-sized pieces using hands.
Trim zucchini ends, halve lengthwise, and cut into 1" dice. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.Coarsely chop capers. -
Prepare the Chicken
Pat chicken dry. Season both sides with garlic and parsley seasoning and 1/4 tsp. salt.
Place chicken on one half of prepared baking sheet and evenly top with 1 tsp. olive oil. -
Add the Vegetables
Place zucchini and broccoli on empty side of baking sheet and toss with 2 tsp. olive oil, potato spice seasoning, and 1/4 tsp. salt.
Spread into an even layer on their side. -
Roast Meal, Heat Sauce, and Finish Dish
Roast in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.
While meal roasts, place butter in a microwave-safe bowl. Microwave uncovered until melted, 15-30 seconds.Carefully remove from microwave. Stir in capers and lemon juice until combined. Set aside.Carefully remove sheet from oven.To serve, top chicken with sauce and garnish vegetables with cheese. Bon appétit!
