Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Microwave Instructions
Thoroughly rinse any fresh produce and pat dry. Drain pork and separate pieces. Halve lime. Stem cilantro, keeping leaves whole.
Place peppers, onions, and 2 tsp. olive oil in one provided tray. Cover tray with a damp paper towel. Microwave until tender, 2-3 minutes.In a mixing bowl, combine softened peppers and onions, pork, cilantro, half the enchilada sauce (reserve remaining for topping), half the cheese (reserve remaining for topping), and chili powder.Place tortillas on a clean work surface. Top evenly with pork mixture in center of tortillas. Roll tortillas tightly and place in both provided trays, seam side down. Enchiladas will fit tightly. Top with remaining enchilada sauce and cheese.Microwave uncovered until heated through, 2-4 minutes.To serve, squeeze lime halves over to taste. Bon appétit! -
2 Oven Instructions
Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Drain pork and separate pieces. Halve lime. Stem cilantro, keeping leaves whole.
Place peppers, onions, and 2 tsp. olive oil in one provided tray. Cover tray with foil and place on a baking sheet. Bake covered in hot oven until tender, 8-10 minutes.Carefully remove tray from oven. In a mixing bowl, combine softened peppers and onions, pork, cilantro, half the enchilada sauce (reserve remaining for topping), half the cheese (reserve remaining for topping), and chili powder.Place tortillas on a clean work surface. Top evenly with pork mixture in center of tortillas. Roll tortillas tightly and place in both provided trays, seam side down. Enchiladas will fit tightly. Top with remaining enchilada sauce and cheese.Place trays on baking sheet again and cover with foil. Bake covered in hot oven until cheese is melted and tortillas are slightly browned, 12-15 minutes.To serve, squeeze lime halves over to taste. Bon appétit!
