Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Prep the Vegetables
Preheat the oven to 375F. Slice the lime in half. Rinse and chop the tomato in to a small Rinse and thinly slice the jalapeno and red chili. If you are averse to spice, omit the seeds and/or lessen the amount of peppers. Rinse and thinly slice the radish. Rinse and roughly chop the cilantro. Halve the lime.

Bake the Tortillas
Lightly brush the tortillas on both sides with olive oil. Place on a baking sheet and cook on each side for 4-5 minutes, or until tortillas are beginning to brown, but are not completely crispy.

Sauté the Taco Beef
Heat a large sauté of medium heat. When pan is hot, add the ground beef and taco seasoning and cook until browned and fully cooked. Beef will no longer be pink. Add ½ cup of water and simmer on low for about 5 minutes.

Assemble the Lasagna
On the same baking sheet that you cooked the tortillas, place 2 tortillas. Add cheese, ground beef, 1 Tbsp. taco sauce, and chopped tomatoes and peppers to each tortilla (save a small amount of taco sauce for plating). Place another tortilla on top of the layered ingredients and repeat this step. Top with another tortilla, and a sprinkle of cheese. Place back in the oven for 4-5 minutes, or until cheese is melted and lasagna is warm throughout.

Plate the Dish
Place one Mexican Lasagna in the middle of a plate. Spoon remaining taco sauce around the plate. Garnish with sliced radish and cilantro. Finish the plate with a dollop of crema.
