Cooking Guidelines

Cook the Pasta
Once water is boiling, add pasta and cook until al dente, 12-13 minutes.
Reserve 1 cup pasta cooking water. Drain pasta in a colander and set aside. Reserve pot; no need to wipe clean.While pasta cooks, roast broccolini. -
Roast the Broccolini
Trim bottom end from broccolini and cut into 2" lengths.
Place broccolini on prepared baking sheet and toss with 1 Tbsp. olive oil, 1/4 tsp. salt, and a pinch of pepper.Spread into a single layer and roast in hot oven until tender and lightly browned, 12-15 minutes.While broccolini roasts, prepare ingredients. -
Prepare Ingredients and Cook Salmon
Mince garlic.
Pat salmon dry, and season flesh side with seasoning rub.Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.Add salmon, skin side up, to hot pan and sear until golden brown and salmon reaches a minimum internal temperature of 145 degrees, 4-6 minutes per side.Don't worry if salmon is blackened; it's not burnt.Remove from burner. -
Make the Sauce
Return pot used to cook pasta to medium-high heat and add 2 tsp. olive oil.
Add garlic to hot pot and cook until aromatic, 30-60 seconds.Add 1/3 cup pasta cooking water, cream cheese, and mirepoix base. Stir until smooth, 1-2 minutes.Bring to a boil. Once boiling, stir in pasta, broccolini, and garlic salt until combined.If too thick, add pasta cooking water 1 Tbsp. at a time until desired consistency is reached.Remove from burner. -
