Start the Green Beans
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Mince chives.Place green beans in one provided tray and toss with 1 tsp. olive oil, garlic salt, and a pinch of pepper.Spread into a single layer and bake uncovered in hot oven until green beans begin to soften, 8-10 minutes.While green beans bake, continue recipe. -
Prepare Pork and Add Potatoes
Pat pork medallions dry and season with 1/4 tsp. salt and a pinch of pepper.
If you receive a whole tenderloin, pat dry, then slice into medallions, 3/4"-thick.Place pork in second provided tray and spray with cooking spray.Carefully remove green beans from oven.Push green beans to one side of tray. Add mashed potatoes, a pinch of salt, and 1 Tbsp. water to now-empty side of tray. Stir vigorously to combine. -
Bake Meal and Make Sauce
Bake both trays uncovered in hot oven until green beans are tender, potatoes are heated through, and pork reaches a minimum internal temperature of 145 degrees, 14-16 minutes.
While meal bakes, in a mixing bowl, combine cherry jam, mustard, and honey.Carefully remove both trays from oven. Stir potatoes vigorously to combine. Rest, 3 minutes.To serve, top green beans with cheese, garnish potatoes with chives, and top pork with sauce. Bon appétit!
