Start the Vegetables
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Break green beans in half.Drain potatoes.Trim and thinly slice green onions on an angle, keeping white and green portions separate. Mince half the green portions of green onions (reserve remaining for garnish). In provided tray, combine potatoes, seasoned salt, green beans, white portions of green onions, 2 tsp. olive oil, and a pinch of pepper.Bake uncovered in hot oven, 20 minutes. While vegetables bake, continue recipe. -
Add the Salmon
Finely crush crackers.
Pat salmon dry and season flesh side with 1/4 tsp. salt and a pinch of pepper. In a mixing bowl, combine crushed crackers and cheese. After 20 minutes, carefully remove tray from oven. Stir vegetables and push to one side of tray. Tray will be hot! Use a utensil. Place salmon, skin-side down, in now-empty side of tray.Top salmon evenly with mayonnaise, then cracker-cheese mixture, pressing gently to adhere. -
Bake Meal and Make Crema
Bake again uncovered in hot oven until crust browns and salmon reaches a minimum internal temperature of 145 degrees, 15-20 minutes.
While meal bakes, line a plate with a paper towel. Spread bacon on towel-lined plate and microwave until crisp, 1-2 minutes. In another mixing bowl, combine sour cream, minced green portions of green onions, and a pinch of salt and pepper. Set aside.Carefully remove tray from oven and bacon from microwave. To serve, top vegetables with remaining sliced green portions of green onions and bacon. Bon appétit!
