1 Bake the Broccoli
In one provided tray, combine broccoli, 1/4 tsp. salt, a pinch of pepper, and 2 tsp. olive oil. Massage oil and seasonings into broccoli. Spread into an even layer.
Bake uncovered in hot oven until tender, 30-35 minutes.While broccoli bakes, continue recipe. -
2 Form the Meatballs
In a mixing bowl, combine ground pork, 1/4 the soy sauce (reserve remaining for after baking), 1/4 tsp. salt, a pinch of pepper, panko, and mayonnaise. Form mixture into 16 equally-sized meatballs.
Place meatballs in second provided tray. -
3 Bake Meatballs, Heat Rice, and Finish Meal
Bake uncovered in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, carefully massage rice in bag to break up any clumps and remove from packaging. Place rice in a microwave-safe bowl. Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork.Carefully remove both trays from oven. Stir remaining soy sauce into meatballs until coated. Tray will be hot! Use a utensil. Stir dressing into broccoli until coated. Tray will be hot! Use a utensil.To serve, top rice with meatballs and broccoli. Garnish with boom boom sauce (to taste) and crispy onions. Bon appétit!
