Start the Mashed Potatoes
Peel and cut potatoes into large evenly-sized chunks.
Bring a medium pot with potato chunks covered by water to a boil.Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Reserve 1/4 cup potato cooking water. Drain potatoes in a colander/strainer and return to pot.While potatoes boil, continue recipe. -
Prepare the Meatloaves and Broccoli
Break broccoli into bite-sized pieces and place on one side of prepared baking sheet. Top with 2 tsp. olive oil, half the garlic salt (reserve remaining for potatoes), and a pinch of salt and pepper. Massage oil and seasonings into broccoli and spread into an even layer on their side.
In a mixing bowl, combine panko and 1/4 cup water. Let sit, 1 minute.After 1 minute, add ground beef, 1/2 tsp. salt, and 1/4 tsp. pepper. Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height.Place loaves on empty side of baking sheet. -
Roast the Meatloaves and Broccoli
Roast in hot oven, 15 minutes.
Carefully remove from oven. Top meatloaves with BBQ sauce.Roast again in hot oven until broccoli is tender and meatloaves reach a minimum internal temperature of 160 degrees, 6-8 minutes.Carefully remove from oven. -
Finish Mashed Potatoes and Finish Dish
Add sour cream, remaining garlic salt, 1/4 tsp. salt, and a pinch of pepper to pot with potatoes. Mash with potato masher until combined and smooth. If too thick, add reserved potato cooking water, 1 Tbsp. at a time, until desired consistency is reached.
Plate dish as pictured on front of card, topping mashed potatoes with butter. Bon appétit!
