If using antibiotic free chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

Prepare the Ingredients
Trim green beans, if necessary.
Stem and mince dill.Pat yellowtail dry. Season flesh side with half the garlic salt (reserve remaining for fish) and a pinch of pepper. -
Cook the Green Beans
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add green beans and cook, 1 minute.
Add 1/4 cup water. Cover and cook until water is almost completely evaporated, 6-8 minutes.Uncover and add minced garlic and lemon basil, mustard (to taste), and remaining garlic salt. Stir occasionally until green beans are tender, 2-3 minutes.Remove from burner.While green beans cook, continue recipe. -
Cook the Yellowtail
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add yellowtail to hot pan, skin-side up, and cook undisturbed until fish reaches a minimum internal temperature of 145 degrees, 3-4 minutes per side.Fish thickness can vary; if you receive a thinner filet, we recommend checking for doneness sooner. Remove from burner.While yellowtail cooks, continue recipe. -
Make Caramelized Onion Butter and Finish Dish
In a mixing bowl, combine softened butter, onion jam, dill, and a pinch of salt.
