Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Carrots
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.

Start the Vegetables
Place carrots and sweet potatoes on prepared baking sheet. Top with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Massage oil and seasonings into vegetables and spread into an even layer.

Add the Meatballs
In a mixing bowl, combine ground beef, panko, za'atar seasoning, sour cream, and garlic salt. Form mixture into 8 equally-sized meatballs.
After 10 minutes, carefully remove sheet from oven and push vegetables to one side.Place meatballs on empty side of sheet. Sheet will be hot! Use a utensil. -
Finish Vegetables and Meatballs and Finish Dish
Roast in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-20 minutes.
Carefully remove sheet from oven. Stir softened butter into vegetables until melted and combined. Sheet will be hot! Use a utensil.To serve, top meatballs with tzatziki and garnish vegetables with cheese. Bon appétit!
