Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Potatoes and Tomatoes
In provided tray, combine potatoes, tomatoes, 4 tsp. olive oil, barbeque seasoning (to taste), 1/4 tsp. salt, and a pinch of pepper.
Bake uncovered in hot oven, 25 minutes.While potatoes and tomatoes bake, continue recipe. -
2 Add Chicken and Make Glaze
Pat chicken dry and season both sides with garlic pepper.
In a mixing bowl, combine jalapeño jelly (use less if spice-averse), brown sugar, and mustard.After 25 minutes, carefully remove tray from oven.Gently stir potatoes and tomatoes, breaking up tomatoes. Push to one side of tray. Tray will be hot! Use a utensil.Place chicken in now-empty side of tray and top evenly with jelly mixture (use less if spice-averse). -
3 Bake Meal and Make Crema
Bake again uncovered in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.
While meal bakes, in another mixing bowl, combine sour cream and half the buttermilk-dill seasoning (remaining is yours to use as you please!).If too thick, add water, 1 tsp. at a time, until desired consistency is reached.To serve, top potatoes and tomatoes with crema. Bon appétit!
