Start the Rice and Shrimp
Trim and thinly slice green onions, keeping white and green portions separate.
Tear cilantro leaves.Carefully massage rice in bag to break up any clumps and remove from packaging. In one provided tray, combine rice, mirepoix base, garlic salt, coconut milk, and 1/4 cup water. Don't worry if coconut milk has solidified. It is part of natural processes. Break up as needed.Pat shrimp dry.In second provided tray, combine shrimp, bok choy, and 1 tsp. olive oil. Spread into an even layer.Bake rice uncovered in hot oven until water is fully absorbed, 20-25 minutes.Bake shrimp uncovered in hot oven, 10 minutes.Shrimp will finish cooking in a later step. -
Add the Seasonings
After 10 minutes, carefully remove shrimp tray from oven and drain any excess liquid. Tray will be hot! Use caution.
Stir in white portions of green onions, Asian garlic, ginger & chile seasoning (use less if spice-averse), and a pinch of salt until combined. Tray will be hot! Use a utensil. -
Finish the Meal
Bake shrimp again uncovered in hot oven until shrimp reaches a minimum internal temperature of 145 degrees, 10-15 minutes.
Carefully remove both trays from oven.Stir butter into rice until melted and combined. Tray will be hot! Use a utensil. If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached. To serve, top rice with shrimp mixture. Garnish with green portions of green onions and cilantro. Bon appétit!
