If using chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

Prepare the Ingredients
Halve potatoes lengthwise.
Trim and thinly slice green onions.Pat steaks dry and season both sides with piri piri seasoning (use less if spice-averse) and 1/4 tsp. salt.Place butter in a microwave-safe bowl.Microwave uncovered until melted, 20-30 seconds.Carefully remove from microwave. -
Start the Potatoes
Place potatoes on prepared baking sheet. Top with half the melted butter (reserve remaining for sauce) and seasoned salt. Massage butter and seasoning into potatoes. Spread into a single layer, cut-side down.
Roast in hot oven until golden-brown and fork-tender, 17-20 minutes.While potatoes roast, continue recipe. -
Cook the Steaks
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add steaks to hot pan. Cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Transfer steaks to a plate and cover with foil. Rest, 3 minutes.While steaks cook, continue recipe. -
Make the Sauce
Place a small non-stick pan over medium heat and add remaining melted butter.
Add green onions to hot pan. Stir occasionally until green onions are fragrant, 30-60 seconds.Add tomatoes, honey, red pepper flakes (to taste), and a pinch of salt and pepper. Stir often until slightly thickened, 3-5 minutes.Remove from burner. -
Finish Potatoes and Finish Dish
Carefully remove potatoes from oven. Flip and evenly top with cheese. Sheet will be hot! Use a utensil.
