Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Form the Meatballs
In a mixing bowl, combine ground beef, 2 Tbsp. water, 1/4 tsp. salt, panko, half the Italian seasoning (reserve remaining for peppers), and a pinch of pepper.
Form mixture into 6 equally-sized meatballs. Place on 1/3 of prepared baking sheet. -
Roast the Meatballs and Vegetables
Cut potatoes into 1/4" rounds. Place potatoes on 1/3 of prepared baking sheet and add potato spice seasoning and 2 tsp. olive oil. Massage oil and seasoning into potatoes and spread into an even layer on their side.
Remove seeds and ribs and cut bell pepper into 1/2" strips. Place on empty 1/3 of baking sheet and add remaining Italian seasoning and 1 tsp. olive oil. Massage oil and seasoning into bell peppers and spread into an even layer on their side.Roast in hot oven until vegetables have softened and meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes. -
Assemble the Subs
After 20 minutes, carefully remove sheet from oven. Drain any excess grease, if necessary.
Open rolls slightly and transfer bell peppers and meatballs to roll. Top evenly with marinara and mozzarella.Place rolls on now-empty section of baking sheet. Sheet will be hot! Use caution.Top potatoes with Parmesan. -
Melt Cheese and Finish Dish
Roast again in hot oven until cheeses are melted, 2-4 minutes.
Carefully remove from oven.Bon appétit!
