Prepare the Ingredients
Break broccoli into bite-sized pieces using hands.
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.Trim and thinly slice green onions, keeping white and green portions separate. -
Start the Vegetables
Place carrots, broccoli, 2 tsp. olive oil, Asian garlic, ginger & chile seasoning (to taste), and 1/4 tsp. salt on prepared baking sheet. Massage oil and seasonings into vegetables. Spread into an even layer on one half of sheet and cover with foil.
Roast in hot oven, 10 minutes.While vegetables roast, continue recipe. -
Finish Vegetables and Roast Salmon
Pat salmon dry and season flesh side with 1/4 tsp. salt.
After 10 minutes, carefully remove baking sheet from oven and remove foil cover. Place salmon, skin-side down, on empty side of sheet and evenly top with half the sweet chili sauce (reserve remaining for sauce mixture).Roast in hot oven until vegetables are tender and salmon reaches a minimum internal temperature of 145 degrees, 10-12 minutes.Carefully remove from oven.While vegetables and salmon roast, continue recipe. -
Heat Rice, Make Sauce, and Finish Dish
Carefully massage rice in bag to break up any clumps and remove from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Stir in a pinch of salt, half the butter (reserve remaining for sauce mixture), and white portions of green onions until combined. Fluff rice with a fork.In another microwave-safe bowl, combine remaining sweet chili sauce, soy sauce, and remaining butter.Microwave uncovered until butter is melted, 15-30 seconds.Carefully remove from microwave and stir sauce to combine.To serve, top salmon with sauce, green portions of green onions, and sesame seeds.
