If using ground beef, roast until loaves reach minimum internal temperature, 20-25 minutes.

Prepare Ingredients and Make Spinach Topping
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.
Trim zucchini ends, quarter, and cut into 1" dice. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.Tear spinach leaves.In a mixing bowl, combine torn spinach, softened cream cheese, half the Parmesan (reserve remaining for meatloaves), and a pinch of pepper. Set aside. -
Assemble the Carrots and Meatloaves
Place carrots on one side of prepared baking sheet and toss with 2 tsp. olive oil. Spread into an even layer on their side.
In another mixing bowl, combine ground turkey, panko, remaining Parmesan, 1/4 tsp. salt, and a pinch of pepper. Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place meatloaves on empty side of baking sheet. Evenly top with spinach topping. -
Start Carrots and Meatloaves and Add Zucchini
Roast in hot oven, 8 minutes.
Carefully remove sheet from oven. Stir zucchini, chicken base, bacon, and 1/4 tsp. salt into carrots until combined. Sheet and carrots will be hot! Use a utensil. -
Finish Vegetables and Meatloaves and Finish Dish
Roast again in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 165 degrees, 12-17 minutes.
Carefully remove sheet from oven.To serve, stir softened butter into vegetables until melted and combined. Bon appétit!
