If using ground beef, roast until loaves reach minimum internal temperature, 20-25 minutes.

If using ground turkey, roast until loaves reach minimum internal temperature, 20-25 minutes.

If using Impossible burger, roast until loaves reach minimum internal temperature, 25-30 minutes.

Prepare the Vegetables
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.
Place carrots, butternut squash, 1/4 tsp. salt, and a pinch of pepper on prepared baking sheet. Spray with cooking spray. Massage spray and seasonings into vegetables and push to one side of sheet. Spread into an even layer on their side. -
Add the Meatloaves
In a mixing bowl, combine ground pork, half the pesto (reserve remaining for sauce) , panko, and garlic salt. Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.
Place meatloaves on empty side of sheet. -
Roast the Vegetables and Meatloaves
Roast in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove from oven and stir softened butter into vegetables until combined. Sheet will be hot! Use a utensil. -
Make Sauce and Finish Dish
In a microwave-safe bowl, combine cream cheese, remaining pesto, 2 Tbsp. water, and a pinch of salt and pepper.
Microwave uncovered until cream cheese is melted, 30-60 seconds.Carefully remove from microwave.To serve, slice meatloaf, if desired, and top with sauce. Garnish vegetables with feta. Bon appétit!
