  • If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

  1. 1

    Start the Carrots

Place carrots on prepared baking sheet and top with 2 tsp. olive oil, potato spice seasoning, 1/4 tsp. salt, and a pinch of pepper. Massage oil and seasonings into carrots and spread into an even layer.

Roast in hot oven, 8 minutes.

Carefully remove from oven and push carrots to one side of sheet. Sheet will be hot! Use a utensil.

  2. 2

    Add the Chicken

Pat chicken dry and season both sides with 1 tsp. olive oil, garlic and parsley seasoning, 3/4 the garlic pepper (reserve remaining for goat cheese butter), and 1/4 tsp. salt.

Place chicken on empty side of baking sheet.

  3. 3

    Roast the Carrots and Chicken

Roast in hot oven until carrots are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.

Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.

    Carefully remove from oven.

While carrots and chicken roast, continue recipe.

  4. 4

Make Goat Cheese Butter and Finish Dish

    Mince chives.

    Coarsely crush walnuts.

In a mixing bowl, combine softened butter, softened goat cheese, and remaining garlic pepper. Set aside.

Plate dish as pictured on front of card, topping chicken with fig preserves, goat cheese butter, then crushed walnuts. Garnish carrots with chives. Bon appétit!
