To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Potatoes
Cut potatoes into 1/2" dice.
Place potatoes on prepared baking sheet and top with 1 Tbsp. olive oil and 1/4 tsp. salt. Massage oil and seasoning into potatoes. Spread into a single layer.Roast in hot oven, 10 minutes.While potatoes roast, continue recipe. -
2 Add the Carrots
Place carrots in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until tender, 4-6 minutes.
Carefully remove from microwave.After 10 minutes, carefully remove sheet from oven.Add carrots, 1 tsp. olive oil, half the garlic and parsley seasoning (reserve remaining for trout), half the garlic salt (reserve remaining for trout), and a pinch of pepper to sheet. Stir to combine and push vegetables to one side. Sheet will be hot! Use a utensil. -
3 Add Trout and Finish Vegetables
Pat trout dry. Season flesh side with remaining garlic salt, remaining garlic and parsley seasoning, and a pinch of pepper.
Place trout on empty side of baking sheet, skin-side down, and evenly top with 1 tsp. olive oil.Roast in hot oven until vegetables are browned and trout reaches a minimum internal temperature of 145 degrees, 7-10 minutes.Carefully remove from oven and stir softened garlic & herb butter into vegetables until combined. Sheet will be hot! Use a utensil.While vegetables and trout roast, continue recipe. -
4 Make Sauce and Finish Dish
In another microwave-safe bowl, combine mustard (to taste) and beurre blanc butter.
Microwave uncovered until butter is melted, 30-45 seconds.Carefully remove from microwave.To serve, top trout with sauce. Garnish vegetables with cheese. Bon appétit!
