If using antibiotic free chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

Start the Potatoes
Cut potatoes into 1" dice.
Place potatoes on prepared baking sheet and toss with 1 Tbsp. olive oil, 1/4 tsp. salt, and 1/4 tsp. pepper. Spread into a single layer.Roast in hot oven, 10 minutes.While potatoes roast, continue recipe. -
Prepare the Ingredients
Trim zucchini ends, quarter, and cut into 1/2" dice. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.
Stem and tear dill.Pat chicken dry and season both sides with lemon n herb seasoning. -
Add the Zucchini and Chicken
After 10 minutes, carefully remove sheet from oven.
Add zucchini and chimichurri seasoning. Stir to combine and push vegetables to one side of sheet. Sheet will be hot! Use a utensil.Place chicken on now-empty side of sheet and evenly top with 1 tsp. olive oil. -
Roast Vegetables and Chicken, Make Hummus, and Finish Dish
Roast in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 12-15 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.While vegetables and chicken roast, combine hummus, creme fraiche, and lemon juice in a mixing bowl. Set aside.Carefully remove sheet from oven.To serve, top chicken with hummus and garnish dish with dill and cheese. Bon appétit!
