If using antibiotic free chicken breasts or chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

Prepare the Ingredients
Cut broccoli into bite-sized pieces using hands.
Pat chicken dry and season both sides with a pinch of salt and pepper. -
Assemble the Broccoli
Place broccoli on prepared baking sheet and top with 1/4 tsp. salt, a pinch of pepper, and 2 tsp. olive oil. Massage oil and seasonings into broccoli.
Spread into an even layer on one half of sheet. -
Add the Chicken
In a mixing bowl, combine panko and cheese. Set aside.
Place chicken on empty side of baking sheet. Evenly top with mayonnaise, then panko mixture, pressing gently to adhere.Spray chicken with cooking spray. -
Roast Broccoli and Chicken and Finish Dish
Roast in hot oven until broccoli is tender and chicken reaches a minimum internal temperature of 165 degrees, 14-18 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.To serve, stir softened butter and pesto into broccoli until combined. Bon appétit!
