Start the Vegetables
Cut potatoes into 1" pieces.
Place potatoes and carrots on prepared baking sheet and top with 2 tsp. olive oil and garlic salt. Massage oil and seasoning into vegetables. Spread into an even layer.Roast in hot oven, 10 minutes.While vegetables roast, continue recipe. -
Prepare the Ingredients
Stem and mince dill.
In a mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground beef, chimichurri seasoning, 1/4 tsp. salt, and a pinch of pepper. Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. -
Finish the Vegetables and Meatloaves
After 10 minutes, carefully remove baking sheet from oven.
Stir vegetables and push to one side of sheet. Sheet will be hot! Use a utensil.Place meatloaves on now-empty side of sheet and top with 1 tsp. olive oil.Roast in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 15-20 minutes.Carefully remove from oven.While vegetables and meatloaves roast, continue recipe. -
Make Whipped Feta and Finish Dish
In another mixing bowl, combine softened cream cheese and feta.
To serve, top meatloaf with whipped feta and za'atar seasoning. Garnish vegetables with dill. Bon appétit!
