Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using ground turkey, roast until loaves reach minimum internal temperature, 20-25 minutes.

Start the Potatoes
Cut potatoes into 1” dice and pat dry.
Place potatoes on prepared baking sheet and top with 2 tsp. olive oil and garlic salt. Massage oil and seasoning into potatoes. Spread into a single layer.
Roast in hot oven, 10 minutes.
While potatoes roast, continue recipe.

Form the Meatloaves
Coarsely chop pepperoni.
In a mixing bowl, thoroughly combine ground beef, chopped pepperoni, panko, ricotta, 1/4 tsp. salt, and 1/4 tsp. pepper.
Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.

Add the Meatloaves
After 10 minutes, carefully remove potatoes from oven. Stir and push to one side of sheet. Sheet will be hot! Use a utensil.
Place meatloaves on empty side of sheet and evenly top with marinara, then mozzarella.

Make Buttermilk-Dill Crema and Finish Dish
Roast in hot oven until potatoes are tender and meatloaves reach a minimum internal temperature of 160 degrees, 15-20 minutes.
While dish roasts, in another mixing bowl, combine sour cream, half the buttermilk-dill seasoning (reserve remaining for potatoes), and 1 tsp. water. Set aside.
Carefully remove sheet from oven and toss potatoes with remaining buttermilk-dill seasoning. Potatoes will be hot! Use a utensil.
To serve, top potatoes with buttermilk-dill crema. Bon appétit!
