Green onions can do great things; the white parts are great in sauce, the green parts are great garnishing many a dish, and they made for a groovy instrumental jam for Booker T. and the M.G.'s in the 60s. But here, they do wonders in a creamy aioli, which tops the tender, flaky fish with delicious onion-y goodness. Green onions? Great onions.

1 Prepare the Ingredients
In a microwave-safe bowl, combine potatoes, 1 tsp. olive oil, and garlic salt. Microwave uncovered until tender, 4-5 minutes.
While potatoes microwave, halve lemon lengthwise. Cut one half into wedges and juice the other half.Trim and thinly slice green onions on an angle, keeping white and green portions separate.Pat salmon dry and season flesh side with a pinch of salt and pepper. -
2 Roast the Vegetables
Transfer potatoes to one side of prepared baking sheet. Using a cup bottom or small bowl, smash each potato until 1/2" thick. Top with cheese and white portions of green onions.
Place green beans on empty side of baking sheet and toss with 1 tsp. olive oil, garlic pepper, and a pinch of salt. Spread into an even layer on their side.Roast in hot oven until green beans are tender and cheese has browned, 12-14 minutes.While vegetables roast, continue recipe. -
3 Cook the Salmon
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add salmon, skin-side up, to hot pan and sear until golden brown and salmon reaches a minimum internal temperature of 145 degrees, 4-6 minutes per side.Remove from burner. -
4 Make Aioli and Finish Dish
In a mixing bowl, combine garlic aioli, green portions of green onions, 11/2 tsp. lemon juice, 1 tsp. water, and a pinch of salt.
Plate dish as pictured on front of card, topping salmon with aioli and garnishing green beans with crispy onions. Squeeze lemon wedges over to taste. Bon appétit!
