If using a customized protein, pat dry and season both sides with a pinch of salt and pepper.

If using chicken breasts, follow same instructions as salmon in Step 5, cooking until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using sirloin steaks, follow same instructions as salmon in Step 5, cooking until steaks reach minimum internal temperature, 4-6 minutes per side. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare Ingredients and Make Crema
Halve lemon. Juice one half and cut the other half into wedges.
Cut broccoli into bite-sized pieces.Mince chives.In a mixing bowl, combine panko, half the Parmesan (reserve remaining for sauce), and 2 tsp. olive oil. Set aside.In another mixing bowl, combine crème fraîche, 1 tsp. lemon juice, a pinch of salt, and chives. Set aside.Pat salmon fillets dry and season flesh side with a pinch of salt and pepper. -
2 Cook the Broccoli
Place a medium oven-safe non-stick pan over medium heat.
Add broccoli and 1/4 cup water to hot pan. Cover, and stir occasionally until tender, 4-6 minutes.Remove from burner. Transfer broccoli to a plate. Wipe pan clean and reserve. -
3 Start the Gratin
Return pan used to cook broccoli to medium heat.
Add 1/2 cup water, cream cheese, a pinch of salt, and garlic salt to hot pan.Bring to a simmer, whisking or stirring vigorously until cream cheese is melted, 2-3 minutes.Once simmering, cook until combined and slightly thickened, 2-3 minutes.Remove from burner. Stir in remaining Parmesan until combined and smooth. Stir in cooked broccoli until combined. Spread into an even layer, then top evenly with Parmesan-panko mixture. -
4 Finish the Gratin
Bake in hot oven until topping is golden-brown, 8-12 minutes.
Carefully remove from oven. Pan handle will be hot! Use an oven mitt.While gratin bakes, cook salmon. -
5 Cook Salmon and Finish Dish
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add salmon, skin side up, to hot pan and cook until golden-brown and salmon reaches a minimum internal temperature of 145 degrees, 4-6 minutes per side.Remove from burner.Plate dish as pictured on front of card, topping salmon with lemon-chive crema and squeezing lemon wedges over salmon to taste. Bon appétit!
