We're near the end of the winter months of dark coldness, but just because it's getting warm doesn't mean we don't need warming soup every other night or so, just to fill us up and make us right. This minestrone, with all the great elements including beans and pasta, fills that bill and more so, with garlic bread on the side just to wrap things up with a bow. Cold night? Meatlovers! If adding protein, cook with 1 tsp. olive oil in a large non-stick pan over medium-high heat. If using Impossible burger, break up burger until heated through, 4-6 minutes. If using ground beef or ground pork, break up until no pink remains and protein reaches minimum internal temperature, 4-6 minutes. If using chicken breasts, pat dry and, on a separate cutting board, cut into 1” dice. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Add to soup as desired.

Prepare the Ingredients
Trim zucchini ends, quarter, and cut into 1/4" dice.
Thinly slice mushrooms.Drain beans.Peel and halve shallot. Slice thinly.Mince garlic. -
Cook the Vegetables
Place a medium pot over medium-high heat and add 2 tsp. olive oil.
Add mushrooms to hot pot and stir occasionally until browned, 4-5 minutes.Add half the garlic (reserve remaining for bread), shallot, zucchini, and seasoning blend. Stir occasionally until slightly tender, 3-4 minutes. -
Start the Soup
Add tomatoes, 4 cups water, mirepoix base, and a pinch of salt and pepper to hot pot. Stir to combine. Bring to a boil.

Finish the Soup
Once boiling, add pasta to hot pot. Stir occasionally until pasta is tender, 8-9 minutes.
Stir in beans. Remove from burner.While pasta cooks, make garlic bread. -
Make Garlic Bread and Finish Dish
Top cut sides of roll with 1 tsp. olive oil and remaining garlic.
Place directly on oven rack in hot oven and toast until golden brown, 8-10 minutes.Plate dish as pictured on front of card. Bon appétit!
