Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, follow same instructions as pulled pork in Steps 2 and 3, breaking up meat until no pink remains and beef reaches minimum internal temperature, 4-6 minutes.

If using Impossible burger, follow same instructions as pulled pork in Steps 2 and 3, breaking up burger until heated through, 3-4 minutes.

If using ground chicken, follow same instructions as pulled pork in Steps 2 and 3, breaking up chicken until no pink remains and chicken reaches minimum internal temperature, 7-9 minutes.

If using flank steak, separate into a single layer and pat dry. Follow same instructions as pulled pork in Steps 2 and 3, stirring occasionally until no pink remains and steak strips reach minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

Prepare the Ingredients
Trim and thinly slice green onions, keeping white and green portions separate.
Halve lime. Cut one half into wedges and juice the other half.Core tomato and cut into 1/4" dice.Drain black beans.Coarsely chop pulled pork. -
Start the Skillet
Place a large oven-safe non-stick pan over medium-high heat and add 2 tsp. olive oil. Add white portions of green onions and corn to hot pan and stir occasionally until softened, 2-3 minutes.
Add black beans, pulled pork, and 1/4 tsp. salt. Stir occasionally until heated through, 3-4 minutes.Stir in enchilada sauce and tomato. Remove from burner. -
Finish the Skillet
Top skillet evenly with cheese. Place under hot broiler and broil until cheese is melted and starting to brown, 2-3 minutes.
Don't text and broil! Keep an eye on oven as cheese may burn easily under broiler.Carefully remove from oven. (Handle will be hot! Use an oven mitt.) -
Make Lime Crema and Finish Dish
In a mixing bowl, combine sour cream, 1 tsp. lime juice, green portions of green onions, and a pinch of salt and pepper.
Plate dish as pictured on front of card, garnishing skillet with lime crema and tortilla strips. Squeeze lime wedges over dish (to taste). Bon appétit!
